Cutting out processed snacks is super easy with recipes like this one. I encourage you to stop buying industrial pastries, chips, and packaged juices and make yourself a tray of these Banana Bites to snack on instead – you’ll love them!

Bananas are one of my favorite fruits to have as a mid-afternoon snack for 4 reasons:

  • Great source of energy so you can go about the rest of your day.
  • They’re very filling and helps you avoid over-snacking. 
  • They’re rich in tryptophan, which means if you eat them in the middle of the day it will help you rest better at night.
  • A very alkaline food, which makes them very easy to digest and they don’t cause heartburn.

Banana Bites- the perfect snack to help stabilize glucose levels. 

One of the best strategies for keeping the glycemic index stable is to combine fruit with a nut spread. The fat and protein in a nut spread are absorbed slowly when they are stuck to the carbohydrates in a banana, which favors digestion and slow glucose absorption.

Instructions

  1. Peel the bananas and cut them into slices.

  2. Place the slices on a tray in pairs. Spread the peanut butter between them.

  3. Put them in the refrigerator for 30 minutes.

  4. Melt the chocolate in a bain-marie.

  5. Pour the chocolate over the banana slices. Then dip them in the granola and shredded coconut mix.

  6. Return them to the refrigerator for another 20-30 minutes. Enjoy!
