Cordon Bleu

Cordon Bleu is a classic dish found in almost every recipe book.  A go-to favorite for both children and adults thanks to its irresistible crunchy outer layer and its delicious, juicy interior. 

Avoid frozen, prepackaged options 

Don’t give in to the temptation to buy prepackaged Cordon Bleu steak. They are full of saturated fats and bad cholesterol.

Instead, make it yourself!You can choose from a wide variety of options: chicken, beef, serrano ham, cooked ham…. Today, I chose to use chicken breast that I stuffed with bacon and cheese. 

Cheese is a must when it comes to blue ribbon. I used a young Swiss gruyère cheese. I love it for its strong aroma and somewhat sweet, nutty flavor.

Breaded, yet healthy- is possible!

Yes, you read that right. Breaded foods are often associated with being unhealthy, but today’s recipe is so healthy that you could eat it every day without worrying about unhealthy side effects.

Healthy gluten-free breading: It is gluten free as I’ve used a mixture I love- buckwheat flour, almond flour and Beef Jerky! The flavor is much more intense (thanks to the dried meat from the Beef Jerky) and the extra crunchy touch means you won’t miss traditional breading at all.

Normally, after breading Cordon Bleu it’s fried in oil resulting in a greasy texture. So instead I’ve used an AirFryer, a much healthier way to prepare food that requires very little oil and also helps better preserve a foods nutritional properties. 

Don’t worry if you don’t have an air fryer, because you can just as easily make this recipe in the oven.

Cordon Bleu

Ingredients

  • 150 gr chicken meat
  • 2 slices of bacon
  • 30 gr cheese
  • buckwheat flour
  • almond flour
  • Beef Jerky
  • extra virgin olive oil

Instructions

  1. Lay out your meat on a sheet of wax/baking paper. If you notice that it sticks too much, moisten your hands with a little water.

  2. Stuff the chicken with a little bacon and cheese. If you have a chicken breast use a knife to cut open the middle slightly. If you have two thin cut slices of chicken breast, put the stuffing between the two, like a sandwich.

  3. Make the batter mixture: add a mixture of buckwheat flour, almond flour and chopped Beef Jerky to taste.

  4. Dip the meat in the batter mixture, spray a little olive oil on top and bake at 190°C for about 10 minutes in the AirFryer. Turn over and bake for another 5 to 10 minutes until golden brown.
