SALMON SKEWERS WITH PEANUT SAUCE

Besides having peanuts and being delicious it’s also got everything we look for in a great recipe: it’s easy, fast and very nutritious as it’s loaded with proteins, fats and minerals.

Salmon Skewers with Peanut Sauce

Ingredients

  • 700 gr Fresh Salmon 
  • 3 tbsp of Soy Sauce 
  • 1/2 tsp of Fresh Cilantro aka coriander 
  • 1 tsp of Honey 
  • 1 piece of Fresh Ginger
  • 1/2 cup of Milk
  • 3 tbsp of Soy Sauce this time for the Sauce 
  • 2 tbsp of Peanut Butter 
  • 1 tbsp of Coconut Sugar 
  • 1/2 cup of Toasted Peanuts 

Instructions

  1. Don't forget to marinate the salmon the day before. To do this, prepare the marinadeby mixing the soy sauce, fresh coriander, and honey. Next, dice up the Salmonin big chunks and leave it to marinate in the mixture overnight. Drain the salmon from the marinade the next day and set aside as we will use later!

  2. Prepare the salmon skewers to your liking, place your favorite vegetable between the salmon pieces, today we have used red onion.

  3. Next, take the marinade that you set aside and brush it over the skewers. 

  4. Then it’s time to cook them on the grill.

  5. Serve the skewers with the peanut sauce and sprinkle them with some of the toasted peanuts. You can crush them by hand or with the help of a mortar. 

  6. Now enjoy!

Peanut Sauce 

  1. Place the milk, soy sauce, Peanut Butter, and brown sugar into a food processor. Once all the ingredients are mixed together well, cook the sauce until it thickens a little.

Notes

This time we chose to pair some red onion with the salmon but you can use other vegetables such as peppers (red, green and / or yellow), mushrooms, tomatoes, or any of your favorite veggies.
