Italian Frittata

Throwback. We are introducing a new section of the blog where over the next few weeks we will be compiling the recipes that you have liked the most over the last several months.

We believe this is a great way to dust off those recipes that we know and love, but that sometimes get forgotten. 

The frittata is a typical Italian recipe. Similar to a French omelet and even the Spanish omelet. A frittata of course is made with eggs and can be stuffed with meat, mushrooms, vegetables, cheeses, or any of your other favorite ingredients.

Always choose organic ingredients whenever you can. Frittatas are so versatile and can be adapted to almost everyone’s preferences, like for vegetarians.   In any case, this dish is perfect for the whole family and is a great source of protein and an ideal way to regain your strength.

This recipe is really easy to make and just takes a little patience, but rest assured that the results are worth it! 

For today, we wanted to make a classic version with veggies, cheese, and bacon, and let me tell you it was sooo good!

Italian Frittata

Ingredients

  • 7 eggs
  • 200 gr bacon
  • 1/2 red pepper
  • 2 tomatoes
  • 1/2 small onion
  • 100 gr parmesan cheese
  • 150 gr provolone cheese
  • Fresh Basil
  • salt
  • pepper
  • Extra Virgin Olive Oil

Instructions

  1. Preheat the oven to 175ºC.

  2. In a large bowl, grate the Parmesan cheese. Add all the whole eggs and beat them until they are all completely blended. Add some salt and pepper to taste.

  3. Cut the bacon into chunks. Place them in a frying pan without any oil, let the bacon cook, and get nice and crispy. The bacon itself will release its fat and fry on its own. When it's crispy, remove it from the pan and set it aside.

  4. Chop the onion and bell pepper into small pieces. In the same pan that you made the bacon, add in the onion and the pepper. Let them cook over medium heat. When the onion is completely transparent, add in the bacon again and stir. Next throw in the tomatoes and a few basil leaves.

  5. If your pan is able to be used in the oven you can do everything in the same dish like me. If not, pour the mixture into a baking dish.

  6. Cut the provolone cheese into small cubes or grate it. You can also substitute it for your favorite cheese. Then distribute it evenly into the mixture.

  7. Pour the egg mixture with the parmesan over the vegetables, bacon, and cheese. Try to completely cover the entire mixture with the eggs. Use a spatula to help you level the mixture.

  8. Bake for 20-25 minutes or until set and a golden crust has formed on top of the frittata.

  9. Gently remove it from the oven. Then let it cool for a few minutes.

  10. Lastly, you can add a few rings of raw onion or diced tomato on top for that finishing touch. Enjoy!

Notes

This is a very simple recipe and nearly impossible to mess up. If you want you can add in your favorite vegetables, minced meat, sausages, or whatever you want. Don’t be afraid to get creative!
