Do you love pizza, but hate those heavy commercially made pizzas? Or maybe you can’t eat gluten? Well, this Carrot and Sweet Potato pizza is for you then! The dough is made of sweet potato: an orange vegetable which perfectly substitutes a regular potato. It’s loaded with vitamins and fiber, and its presence of complex carbohydrates makes everything absorb through the body slowly without causing spikes in blood glucose levels. The sweet potato, mixed with the fats of the ham, will give you long lasting energy.
The dough of our pizza has a super appetizing toasted orange color thanks in part to the carrot, which helps strengthen our nails and hair, our skin glow with a more vivid tone, especially good since summer is around the corner. You can add whatever you want to your pizza: we love the ham mixed with the freshness and crispy texture of the arugula which make a perfect combo. If you are a vegetarian, skip the ham and add the ingredients that you like most.
Sweet Potato & Carrot Pizza
Ingredients
- 2 medium sweet potatoes
- 2 medium carrots
- 2 tbsp Buckwheat Flour and Almond Flour (if you do not have one, replace it with another flour)
- 2 egg yolks
- basil and oregano to taste
- salt
Ingredients for the topping
- 3/4 cup chopped natural tomato
- 1 pack of buffalo mozzarella cheese
- 3 medium mushrooms
- 1 handful cherry tomatoes
- 1 handful arugula
- Sliced ham (preferably Iberian)
- 1 small onion cut in thin strips
Instructions

To start preparing your sweet potato and carrot pizza, by preheating the oven to 180ºC. Cook the sweet potatoes and carrots in a pot with a little water to soften them.
Next smash the sweet potatoes, and carrots in a bowl, then add in the flour, egg yolks, salt and spices and mix til everything is packed together.

Place the wax paper on a baking tray and lay out the dough giving it the shape you want. The thinner the dough, the crisper the sweet potato and carrot pizza will be. Put the tray in the oven at 250ºC for 25 minutes.

Take it out, turn the dough over and put it back in for about 20 minutes.

While the pizza is baking, slice the mozzarella, and chop up the mushrooms, onion and tomatoes.

Take the pizza out of the oven, add the chopped tomato and the rest of the toppings except for the arugula.

Stick it back in the oven for about 5 minutes.

Now, take your Sweet Potato and Carrot Pizza out of the oven, toss on some Arugula and enjoy!
