Thai-Style Chicken in Cashew Cream Sauce Recipe

Ingredients

  • 1 Garlic Clove
  • 1 Large Chicken Breast
  • 1/2 White Onion
  • 2 tbsp Tamari Sauce
  • 1/2 tbsp Cashew Cream
  • 1/2 cup Chicken Broth
  • 1 tbsp Curry Powder
  • 2 handfuls Toasted Cashews
  • Pepper or Cayenne Pepper to taste
  • Cilantro to top it off

Instructions

For the sauce, start by adding the Tamari Sauce, Cashew Cream, and Curry in a saucepan. Stir well, and add the chicken stock mixing continuously.

  1. Place the plan on high heat at first, when it starts to boil, lower the heat and let it reduce until it’s a little thick.

While you are reducing the Thai sauce, cut the chicken breast into cubes and add a pinch of pepper or cayenne; and then set aside.

  1. In a skillet, add the minced garlic and cook it until it's a golden color , then add the chicken breast and let it cook well on all sides.

  2. Next, add the chopped onion, stirring constantly until it’s soft and transparent, and set aside.

  3. Once the sauce has reduced, add the chicken and the toasted cashews in. If you prefer or if you have raw cashews at home you can toast them yourself.

  4. To finish off your dish, pour some of the Thai Sauce on top of your Chicken and sprinkle on a few Cilantro leaves and enjoy!
