Paleo Bread Recipe

Ingredients

  • 1 cup quinoa flour
  • 1 cup almond flour
  • 2 cups parmesan cheese
  • 1/4 cup teff grains
  • 1/4 cup psyllium seeds
  • 2 pinches sea salt
  • 1 tsp baking powder
  • 1 cup water

Instructions

  1. Preheat the oven to 190ºC. Grate your parmesan cheese.

  2. Add the quinoa and almond flour to a bowl (don’t worry if you only have one of them on hand, just make sure to use the right amount), the grated Parmesan cheese, the baking powder, the salt, the eggs, and half a cup of water. Mix using a blender or by hand until all the ingredients are combined well.

  3. Gradually stir in the teff grains, psyllium seeds, our superfood, and the rest of the water until you get a uniform mixture.

  4. Pour the mixture into a baking dish. If it's metallic, pre-grease it with butter. Remember though that a silicone mold would be best as they are the easiest to unmold the bread without breaking it.

  5. Place the pan in the oven for between 25 to 35 minutes or until the top of the bread turns a golden color. If you’re still not sure if it's ready or not, stick a toothpick or knife in the middle of the bread. If it comes out dry it is ready to remove.
