Turn the oven to 180ÂșC. Wash and peel your sweet potatoes and then place them on a tray with aluminum foil.
Bake the potatoes until they are soft and a fork can easily pierce them.
Remove them from the oven and slice them down the middle, lengthwise. Separate them with a knife just enough without them disconnecting.
Add two tablespoons of ground beef to each sweet potato and a little grated cheese.
Bake again for 10 minutes until the cheese starts to bubble. Remove from the oven and let sit for a few minutes.
Serve hot. Add two tablespoons of sour cream and chopped chives.
