Baked Stuffed Sweet Potato

Ingredients

  • 2 medium-sized sweet potatoes
  • Ground beef
  • 1/4 cup organic sour cream (or greek yogurt)
  • Diced onion
  • salt
  • Pepper
  • Cheddar or Provolone Cheese

Instructions

  1. Turn the oven to 180ÂșC. Wash and peel your sweet potatoes and then place them on a tray with aluminum foil.

  2. Bake the potatoes until they are soft and a fork can easily pierce them.

  3. Remove them from the oven and slice them down the middle, lengthwise. Separate them with a knife just enough without them disconnecting.

  4. Add two tablespoons of ground beef to each sweet potato and a little grated cheese.

  5. Bake again for 10 minutes until the cheese starts to bubble. Remove from the oven and let sit for a few minutes.

  6. Serve hot. Add two tablespoons of sour cream and chopped chives.
