Wash the cauliflower well by putting it under the tap.
Preheat the oven, at maximum power, and in grill mode.
Bring the whole cauliflower to a boil, about 10 minutes. Turn it over so that it is done well on both sides.
Place the cauliflower on a baking sheet and coat with olive oil. It is important that it is completely soaked.
Add the finely chopped garlic, salt and pepper. Massage the cauliflower very well so that it is fully covered and can get the most flavor.
Bake the cauliflower for 5-10 minutes, or until lightly golden on top.
Mix two tablespoons of almond cream and a squeezed lemon, add salt and water (to taste), until obtaining a liquid texture.
Serve the cauliflower, adding the almond sauce on top and, finally, the coriander.
Chef's tip: If you want, you can leave the cauliflower stems: they are edible, they are full of nutrients and they are also delicious!
