Tuna Curry

Ingredients

  • 2 tuna fillets
  • 1/2 tablespoon olive oil
  • 1/2 onion
  • 1 carrot
  • 1/2 red bell pepper
  • 3 cloves of garlic
  • Fresh ginger
  • Curry powder
  • Turmeric powder
  • Cumin powder
  • Salt
  • Sweet paprika
  • Pepper
  • 1/2 cup homemade tomato sauce
  • 2 cups pumpkin puree
  • 240 ml chicken broth
  • 180 ml coconut milk
  • Kale Chips 
  • Cilantro
  • 1/2 lemon (in juice)

Instructions

  1. Peel and chop the onion, carrot, and bell pepper - sauté in a pan over medium heat for 5 minutes.

  2. Add the garlic and freshly grated ginger and cook for 2 more minutes.

  3. Add the spices, tomato sauce, pumpkin puree, broth, and coconut milk. Let it simmer, stirring from time to time until a sauce starts to form.

  4. Add the tuna fillets to the pan and cook for another 10 minutes.

  5. Garnish with  Kale Chips and cilantro.
