Peel and chop the onion, carrot, and bell pepper - sauté in a pan over medium heat for 5 minutes.
Add the garlic and freshly grated ginger and cook for 2 more minutes.
Add the spices, tomato sauce, pumpkin puree, broth, and coconut milk. Let it simmer, stirring from time to time until a sauce starts to form.
Add the tuna fillets to the pan and cook for another 10 minutes.
Garnish with Kale Chips and cilantro.
