Remove the pit from each date and soak them in boiling water for 15 minutes. Then beat well until you obtain a creamy paste.
Heat the coconut oil in a saucepan add in the 2 tablespoons of date paste and water.
Combine all the flours together in a bowl, add in the salt and mix well.
Next pour in the heated mixture from the saucepan into the bowl with all the flour.
Layout some parchment paper on a baking sheet and place the dough in the center making sure to stretch it out well. Refrigerate.
While the dough is cooling, slice the apples as thinly as possible with a slicer if you have one.
Put the lemon juice in a bowl with the 2 tablespoons of date paste, the cinnamon and the cardamom
Remove the base of the pie from the refrigerator and spread the almond cream all over the top , next place in the apples.
Bake for about 30 minutes.
Chef’s Trick:
If you want you can add a professional finishing touch by slightly burning the top of the pie with a blowtorch to give it a nice caramelized touch.
You can pair the pie with a little more almond cream, ice cream or even add cream cheese on top. Hope you enjoy!
