Avocado Salmorejo

Ingredients

  • 2 large avocados (or 3 small ones)
  • 1 large tomato (or 2 small ones)
  • 1 cucumber
  • 1 garlic clove
  • 1/2 a lemon
  • Extra virgin olive oil
  • A pinch of salt

Toppings

  • Beef jerky with fresh sour cream and basil (optional)

Instructions

  1. To start, cut the avocados in half lengthwise and remove the pit.

  2. Scoop the avocado out and place in a blender.

  3. Peel and cut the tomato and also add it to the blender.

  4. Squeeze the juice from half a lemon over the tomato and avocado, and add in the cucumber and peeled garlic clove.

  5. Blend everything together using the highest setting and slowly add in the extra virgin olive oil as you go. Blend everything until you get a nice uniform and creamy texture.

  6. Remove from blender and pour in a bowl or serving dish of your choice. Throw some beef jerky on top with some chopped basil leaves and drizzle some sour cream over your salmorejo, and enjoy! 

Notes
