TOMATO PACKED OMELETTE WITH MOZZARELLA

Our passion is healthy cooking, but it’s true that there are days where things are so chaotic that it’s impossible to find any time to cook. Eating well, doesn’t mean that we need to complicate our lives though. Hence, this recipe for a tomato packed omelette with mozzarella.

Tomato Packed Omelette with Mozzarella

Ingredients

  • 2 tbsp of butter
  • 3 eggs
  • 2 tbsp of tomato (fried)
  • 60 gr. of mozzarella cheese
  • 50 gr. of red onion 
  • Salt to taste
  • Pepper to taste 

Instructions

  1. Beat the eggs in a bowl with salt and pepper to taste. 

  2. In a small skillet over medium heat, melt the butter and then add in the onions to saute them until slightly golden. 

  3. Add in the eggs while you move the pan in a circular motion so that the eggs are distributed well and do not stick to the bottom of the pan.

  4. Shred the mozzarella with your hands, (or if you wish cut it into small pieces before hand), and add it on top of the eggs in the pan.

  5. Next put the 2 tablespoons of fried tomato in the center of the omelette.

  6. Depending on how you like your eggs, either flip it over or remove it from the heat when the eggs arecooked to your satisfaction. In my case, I removed it after the eggs had cooked well and turned a golden color on the bottom. 

  7. Lastly, place your omelette on a plate and add a little more pepper to taste (optional).

These omelets are an excellent option for breakfast, since eggs help regulate blood sugar levels and help us to feel full until lunchtime.

 

You can even prepare this recipe for dinner, which will help you keep your carb consumption at bay and increase your quality protein intake.Don’t forget to use organic eggs whenever possible.

The thing I love most about omelettes is that it allows us to get creative and use up whatever we have left over in the fridge! Nothing has to go to waste. Plus this is also good for our pockets as we save money by making sure to use everything we’ve bought.  

Here ‘s a creative example, fill your omelette with fresh chopped herbs (mint, parsley, dill, coriander) and/or grated zucchini. Another option is to garnish your omelette with some finely grated fennel and/or red cabbage, maybe an avocado on top … you see where this is going?
