Spring Rolls with Cashew Cream 

Spring Rolls with Cashew Cream

Ingredients

  • 1 cabbage
  • 3 carrots
  • 150 gr Italian pepper
  • 1 avocado
  • 1 tomato
  • 2 cups mushrooms
  • Salt to taste
  • 40 gr fresh basil
  • 1/2 spring onion
  • 20 spring onion
  • 1 tbsp cashew cream

Instructions

  1. Bring a large pot of water to boil with a pinch of salt. While it starts to boil, cut the stem off of your cabbage (be careful not to cut and damage the leaves).

  2. After the water is boiling, add the cabbage and let cook for 5 minutes. Remove the pot from the heat, strain the leaves, and let cool.

  3. While the cabbage is cooking, start preparing the filling for the rolls. Chop all the vegetables you want to use and set aside.

  4. Take the already cleaned and prepared prawns and cook them in a frying pan with olive oil, salt, and pepper.

  5. Once all the ingredients are ready you may begin to assemble the rolls.

  6. Place the leaf facing up (there should be a curve in the leaf), then start placing your filling of choice in the middle of the cabbage leaf.

  7. Then fold the edges inward as if you were rolling a burrito. To help it stay closed you can stick a toothpick in it.

  8. Next, put your cashew cream in the microwave for a few seconds (or until melted).

  9. Serve the rolls with the cashew cream either on the side or on top of the rolls as a topping, it will give it a bittersweet and tasty touch!
