SIX LOW CARB “RECIPES OF THE WORLD”

Rice, Pasta, Flour, and legumes…  These are what the majority of people eat day-to-day, and they form the base of the traditional food pyramid that we have been shown since we were children. However, this food pyramid isn’t the best one, if you want to lead a healthier life and eat foods that give your body and mind energy throughout the day.  The correct Food Pyramid doesn’t include carbohydrates, and it shows the relevant role of natural fats, from foods such as meat and fish:

Yes, carbohydrates give us energy, but it’s the kind of energy that leaves as quickly as it comes. This happens in the case of simple carbohydrates, they cause our blood glucose to spike since they are easily processed in the body.  On the contrary, complex carbohydrates, as found in fruits and vegetables, take longer to process in the body, releasing all their benefits at a slower pace, making them better and longer-lasting.

Cauliflower Rice Asian Style

Rice is the star in Asian Cuisine. It is so versatile, making it easy to use in a wide variety of dishes and the characteristics of rice make it a great companion to soaking up any sauce. Nevertheless, it’s not recommendable when thinking about low carb recipes, but have no fear because rice is easily substitutable. Quinoa or Cauliflower Rice makes it easier to not have to give up some dishes. This is exactly the case with this Asian-Styled Cauliflower Rice: Gluten-Free and without any refined carbohydrates. 

Half a cauliflower 

One carrot 

One Red Bell Pepper 

 Half a red onion 

One zucchini 

Sesame Seeds 

You just have to crumble the cauliflower and mix it in with your favorite vegetables, and a sauce that gives it flavor and texture. If you are fond of Asian cuisine, a sauce made from peanut butter is a perfect choice. 

Oriental Style Granola Salad with wakame and curry 

 

One of the main ways we end up eating carbohydrates and refined sugar comes from the typical boxes of breakfast cereal. Even the whole wheat ones, which people buy thinking that it has more fiber. They aren’t recommended at all.  It’s best to opt for a Natural Granola made with fruit, seeds, and nuts. This starts your day off with a good amount of natural fats, proteins, and different vitamins. Besides, it allows you to make exotic low carb recipes such as this granola with wakame.

40 g of dried wakame  

Natural Granola (We used this blueberry granola with, amaranth and cardamom) 

Half a cup of buckwheat 

3 tbsp of curry powder 

2 tbsp of Tamari Sauce 

Beet Hummus without Chickpeas

 Hummus is a typical Middle Eastern spread that is quickly becoming popular all over the globe.  The traditional recipe uses a chickpea base mixed with a Tahini paste among other ingredients. To avoid the carbs contained in the legumes, we can use the Tahini Paste with beat-based vegetable hummus. This goes great with any raw vegetable or some gluten-free seed crackers.

400 g of cooked beets 

100 g of quinoa

Half a tbsp of tahini (sesame seed paste )

1 tbsp of lime juice

4 tbsp of extra virgin olive oil 

Cumin powder salt

Quinoa and Salmon Sushi with peanut sauce

Quinoa is one of the best sources of vegetable protein, and its texture is similar to that of rice. Quinoa can be used as a substitute in any recipe that usually uses rice, you just have to season it a bit more. A good example is in traditional Japanese-style sushi, in which there are four main ingredients: quinoa, avocado, salmon, and nori seaweed.

Half a cup of quinoa

2 sheets of nori seaweed 

1 ripened avocado 

A slice of fresh salmon 

½ a cup of rice vinegar 

2 tbsps of coconut sugar  

2 sheets of unflavored gelatin 

2 tbsps of natural peanut butter 

Gluten-free Soy Sauce or Tamari Sauce 

 Red Curry Thai Zoodle Soup 

Apart from Rice, pasta is another star dish in many households. It’s very easy to make and it is used as a base in many dishes we have come to know. What if there was a perfect alternative to pasta, just as delicious but much healthier? Well, we’re happy to say there is, and it even looks similar to pasta!  We’re talking about the latest culinary trend: Zoodles aka Zucchini Spaghetti All you need to do is cut the zucchini into very thin strips similar to that of spaghetti; You can do this with the help of a spiralizer, a simple peeler or a small kitchen knife, the choice is yours! Once you’ve got your noodles made we can start making either of these tasty dishes a chicken soup and/or this Red curry Thai Zoodles

500g of chicken breast 

3 medium-sized zucchinis 

Extra virgin olive oil 

1 carrot 

1 red bell pepper 

200 g of mushrooms 

1 red onion and 1 chive 

3 tomatoes

Homemade Pizza using Almond & Quinoa Flour 

To finish off our list of low carb recipes we’ve decided to end with something we all love: pizza.  It’s always a favorite choice when having dinner with friends, or when wanting to get the kids involved to help prepare a family meal.  Pizza is so diverse, as you can make it with a variety of different ingredients and toppings, such as vegetables, meat, and fish as well as use different sauces. The problem?  The pizza dough always has flour and refined flours are the ones often used. So, we need to substitute these flours with a more natural choice using nuts and quinoa as the base of our pizza. 

Half a cup of quinoa flour and another half a cup of almond flour  

2 eggs 

 A pinch of Himalayan Salt
