Wakame is a seaweed widely used in Japanese and Korean cuisine for all its health benefits. All of its health properties has helped it popularity to spread globally and be more easily accessible in stores. Its popularity comes from its great antioxidant and antiinflammatory powers thanks to its wide-variety of micronutrients. Some of it’s other nutritional benefits are it’s a good source of B vitamins, and minerals like iron and essential fatty acids while also reducing energy intake.

Savoury Oriental-Style Granola with Wakame and Curry

Ingredients

  • 75 gr Buckwheat
  • 3 tbsp Curry Powder
  • 2 tbsp Tamari Sauce
  • 1/4 cup Dried Wakame Seaweed
  • 225 gr blueberry, amaranth and cardamom granola

Instructions

  1. To prepare your savoury granola recipe, start by hydrating the buckwheat. To do this, soak it in water for 3 hours.

  2. Afterwards, preheat the oven to 180º.

  3. Once the wheat has soaked, drain it well and place it in a food processor or blender along with the curry and the Tamari sauce. Put aside.

  4. Chop the dried wakame seaweed and add it to the blueberry, amaranth and cardamom granola.

  5. Add the buckwheat mixture to the wakame and granola mixture and combine well.

  6. Place some wax paper on a baking sheet and spread out the combined mixture on the tray. Be sure to avoid large chunks of granola.

  7. Bake it in the oven at 180ºC for about 25-30 minutos; Remember! Each oven is different, so watch the granola so that it doesn’t burn. The savoury granola should be golden and crispy. If you notice that after some time, it’s still a little tender, leave it in the oven to dry completely.
