QUINOA & SALMON SUSHI WITH PEANUT BUTTER SAUCE

Sushi is probably the first food that comes to mind when we think of Japan. The basis of sushi is of course rice and some kind of raw fish usually salmon or tuna. One of the most well-known versions of sushi is a roll made from a dark seaweed called nori, which also contains rice, fish, and usually some other ingredient like avocado. Other vegetables can also be used such as carrots and to add a spicy touch there is nothing better than a bit of wasabi. 

The problem with traditional sushi is the use of rice, which is not the best option healthwise.  Rice contains carbohydrates, that cause our blood glucose levels to spike and doesn’t provide long-lasting energy.  In order to avoid this, it’s easy to simply replace the rice for quinoa. Besides, replacing the rice for something with a complete protein like quinoa makes this dish more nutritious and satisfying.

Ingredients for Quinoa Sushi

Ingredients

  •  Half a cup of quinoa
  • Half a cup of Rice Vinegar 
  • Tbsps of coconut sugar 
  • Two sheets of plain gelatin 
  • 1 tsp of salt 
  • 2 sheets of Nori Seaweed 
  • 1 medium-sized ripened avocado 
  • A fresh slice of salmon 
  • 2 tbsp of natural peanut butter
  • Gluten-Free Soy Sauce to taste 
  • ½ tbsp of White Vinegar 

A bamboo mat is a necessary tool when making quinoa sushi as it helps to roll the sushi together without all the ingredients falling apart. But, don’t worry if you don’t have one at home, because they are super easy to find in many of your local stores or online, like on Amazon

Making this quinoa sushi is much easier than it seems, it only takes a little practice to learn how to use the bamboo mat. If you follow the steps in the video below, we’re sure you won’t have any problems.
