Pizza Mugcake!

If you thought Oat Flour was only good for making desserts and other sweet dishes, boy do I have a surprise for you! The recipe Pizza Mugcake I’ve prepared for you today is an amazing, savory kind of porridge, but it tastes like pizza! 

Did you know that pizza is the most popular dish in the world? For today’s recipe, I’ve used tomato sauce, mozzarella, and oregano… the three must-have ingredients for any pizza. From there, you can customize it any way you like.

Oven-Baked 

Normally mugcakes are made in the microwave but I prefer to make this one in the oven because I love the gratin touch it gives. However, feel free to make this recipe in the microwave if you want. The recipe is exactly the same, and with just 2 minutes in the microwave, you’ll have your pizza.  

For a more intense, crunchy touch I added some Kale Chips on top of my pizza. Haven’t tried them yet? This, 100% healthy snack is made up of dehydrated kale leaves marinated with a variety of spices. These bags of Kale Chips fly out of my house, so I always have extras around for recipes like this. 

Mugcake Pizza for 1

This recipe is my go-to, tasty, express dinner when I get home tired and just don’t feel like cooking. It’s for one person, but you can easily adjust the quantities and use a larger mold, so you can make a good plate of Pizza Mugcake for the whole family.

Pizza Mugcake

Ingredients

  • 40 gr oat flour
  • 60 gr homemade tomato sauce
  • grated mozzarella cheese
  • cherry tomatoes
  • extra virgin olive oil
  • oregano
  • garlic powder
  • salt
  • 1/4 teaspoon baking powder
  • Kale Chips 

Instructions

  1. Preheat the oven to 180ºC.

  2. Mix the oats, tomato sauce, olive oil, spices, and yeast.

  3. Put half of the mixture in an ovenproof bowl; then add in half of the cheese. Pour the rest of the mixture on top and sprinkle on the remaining grated cheese.

  4. Garnish with the tomatoes and bake in the oven for 25 minutes. For the last 10 minutes set your oven to the gratin function.

  5. Remove from oven and sprinkle on some yummy Kale Chips.
