MAKE A MUG CAKE WITH AÇAÍ AND CHOCOLATE OATS IN 2 MINUTES

Who doesn’t like cake? Especially, chocolate cake! This recipe has many benefits. The ingredients are 100% healthy and the recipe doesn’t call for any refined flours, or added sugars. This Mug Cake is gluten-free and is made from oat flour which provides us with a lot of energy. Açaí, one of today’s trendy fruits, has antioxidantes and is rich in many nutrients that help support our immune system. And, if you sprinkle a few pieces of pure cacao on top, so that they melt, you get a super juicy cake. 

A Mug Cake is a kind of Sponge cake, that is made in a mug so that you can enjoy it in the moment yourself, or even share it with someone else. You don’t need much of each ingredient and it doesn’t take long to cook. This gives you the ability to make it on the fly for breakfast or a quick snack. If you add in a topping like a nut cream, you will have a very rich, spongy cake packed with nutritional benefits. Plus you can easily add protein to this recipe by throwing in a tablespoon of your favorite protein powder.

Mug Cake with Açaí and Chocolate Oats

Ingredients

  • 1 egg
  • 3 tbsp crushed açaí or açaí powder (you can add more depending on which flavor you want to be more dominant).
  • 400 gr Chocolate Oat Flour
  • 30 gr ground Almonds or Almond Flour
  • 1 tbsp protein powder either strawberry or chocolate (optional)
  • 1/2 tbsp leavening (better if it’s fresh)
  • 40 gr fresh cheese or greek yogurt
  • 1/4 cup milk
  • pure Cacao or crushed chocolate
  • Fruit as a decorative topping  (we used a ripe apricot)
  • 1 tbsp nut cream for the topping

Instructions

  1. Grab a microwave safe mug. Mix in the oat flour, ground almonds (or almond flour), leavening, fresh cheese (or greek yogurt), egg and milk. If you want your mug cake to include some protein, add in a tbsp of protein powder. Mix well, with a spatula or whisk.

  2. After the mixture is completely blended, add in the açaí and stir.

  3. Before putting the mug into the microwave, top it off with some pieces of chocolate, so that it melts into the mixture and makes it extra juicy.

  4. Pop it in the microwave for 2 minutes. However, if your microwave has a lot of power, just one minute will do. Then you can check the texture and if it isn’t ready, give it another minute.

  5. Lastly, add the nut cream topping (peanut, almond, cashew...) and some slices of apricot, or whatever fruit you prefer.

Notes

The chocolate flavor and color comes from using a Cacao Oat Flour. If you have flavored Oat Flour, you can just mix in some Cacao powder ( the purest kind possible, without added sugars)
