Our busy day-to-day lives often don’t leave us time to eat a complete and healthy breakfast so we can start the day energized. Many people grab a quick coffee oftentimes not even sitting down to enjoy it or sitting around the breakfast table with their families to start the day. However, these days with having to be home we have the opportunity to slow down and enjoy, even in the smallest of houses. This is a great moment to spend a little extra time preparing something you usually wouldn’t have time for or even just an easy breakfast that’s different than you would normally have. I’ve come up with five original breakfast recipes for you to try. Some are sweet and others are salty but all of them are very healthy.  

Waffles made with Oat Flour 

Waffles and pancakes are the quintessential kings of breakfast for people with a sweet tooth, especially kids. They can be combined with nuts, fruit, or a delicious nut-cream or butter. Ideally, you want to make them Gluten-Free and Low-Carb which can be done with coconut or oat flour. Eggs give it the necessary proteins we need, and if we add some greek yogurt to them they become very soft. I personally love mine with peanut butter and cinnamon. This recipe for healthy waffles is going to win over the whole family. Don’t forget to add in your favorite seasonal fruit for an extra personal touch. Strawberries are in season now and go great with these.  

For those of us who don’t have a waffle maker you can use these same ingredients and serve them up as pancakes instead. These Oatmeal pancakes with chocolate are perfect for people who want to have their oatmeal in the mornings but in a new and exciting way. If you do any kind of physical activity in the morning, we recommend adding in some vegan chocolate protein powder with oat flour, bananas, and eggs. Turning these into an incredible source of energy. 

Açaí bowl with fruits and granola

Even though many people haven’t heard of it before, Açaí is one of my favorite things and is never left off my shopping list. Açaí is a fruit that originates in Brasil, it’s loaded with antioxidants, proteins, fats, and fiber making it an amazing food for athletes. This delicious bowl is easy to make and goes well with yogurt, and your favorite granola and fruit. A good combination is a banana with blueberries and chia seeds. Another way to eat açaí is to put it in a smoothie, using up the frozen fruit slices we have. If you like to drink milk in the morning, you can make a bowl of granola and fruit with almond or coconut milk in less than five minutes.  

Avocado Omelet

We know that there are two types of people: those who throw themselves at the sweet table at the free buffet in a hotel, and those who do the same but at the salty table. Omelets are fast and versatile like this avocado one. You can add Iberian Ham and diced asparagus to it or even mushrooms. Cook the egg however you like it, but more or less done. And, if you prefer your eggs by themselves then use the other ingredients for a salad on the side.  

Another option is to make a creamy omelet with cheese. Choose the type of cheese you want according to the intensity and flavor you prefer. I like it with mozzarella cheese, and with a touch of fried tomato that gives it freshness and a different color. With a little truffle on top, you’ll have an authentic gourmet breakfast.

Egg and Bacon Cups 

For another “salty” breakfast option you can use an egg again but cooked in a completely different way. To make these cups you need a muffin tin or molding so that they get the shape we are looking for. The yok is a juicy center while the outside is golden and toasty with a bit of a crispy texture almost as if it were a puff pastry. If you throw in some smoked bacon, it gives it a more interesting flavor. What’s more interesting is adding the pomegranate seeds on top which gives it a surprisingly fresh taste as well as all the added benefits that come from this fruit.  

Eggs are so versatile that we can’t forget about poached eggs. It’s easier than it seems, just be careful when cracking the egg over the boiling water so that the yolk does not break. If you can, put them on top of a bed of spinach with some seeds or a little truffle on top. Any other vegetables you have at home, such as cabbage, kale, or broccoli, are great too.

Banana, Cacao and Peanut Butter Smoothie 

Last but not least, on my favorite breakfasts like are: smoothies. You can make them with any previously frozen fruit you have plus some yogurt or milk. This Smoothie is a little more original as it includes a kind of nut-cream. I’ve chosen peanut butter, but cashew or hazelnut cream also work well. To give it a similar color to that of a chocolate smoothie, add in the cocoa powder. For an even more unique touch use this trick: add a little ginger and black pepper, trust me.
