Chicken Skewers with Tzatziki

Eating chicken is a great way to incorporate low-fat proteins and other nutrients into our daily diet. However, not all chicken is the same: an industrially produced chicken breast is not the same as the ones that are organically raised. A series of requirements must be met for a chicken to get an organic seal and certificate. Which is what we have chosen for this Chicken Skewers with Tzatziki dish. 

Organic Chickens are fed with organic feed and grains. Their diets don’t include any growth hormones which is why the animals take longer to reach their optimal weight for consumption. An organic chicken needs at least 3 months to reach their ideal weight. An industrial Chicken only needs about 40 days. The danger of using hormones in animal diets to accelerate their growth is that these same hormones then get passed on to the people who eat them.

Chicken Skewers with Tzatziki

Total Time 40 minutes

Ingredients

  • For the Sauce:
  • 1 Cucumber
  • 1 Garlic clove
  • Salt
  •  A cup of organic yogurt 
  • 1/2 Lemon

For the Skewers:

  • 1 Organic chicken (size depends on how many skewers you want to make) 
  • 1 Sweet potato 
  • 1 Green Pepper 
  • 1 Red Pepper 
  • 1 Zucchini
  • Lemon to taste 

Instructions

  1. First chop the sweet potato, peppers, and zucchini.  Repeat this process with the lemon and chicken and then thread each skewer with a piece of chicken followed by a piece of bell pepper and so on then repeat.

  2. After you have all the ingredients on the skewer (you can use a metal or wooden skewer), turn on the grill. If you don't have a grill, you can grill it in a frying pan or an electric grill

For the Sauce:

  1. Peel the zucchini with a peeler or a knife, and grate it through the thickest part of the grater. Be careful not to cut yourself.

  2. Afterward, put the zucchini on a plate and sprinkle it with salt. Let it sit for 5 minutes to help release the water. Then drain it.

  3. Chop some garlic into very tiny pieces and then add that on top of the zucchini. Then  add a bit of squeezed lemon juice.

  4. Drain the zucchini again just to make sure you’ve removed as much of the water as possible, then add the yogurt on top, mix everything well, and voila!

  5. Remove the skewers from the grill. You can put the tzatziki sauce directly on top of the skewers or in a bowl.
