Total Time 1 hour 10 minutes
Servings 8 personas

  • 240 ml whole milk
  • 2 tbsp apple cider vinegar
  • 1 tbsp cinnamon powder
  • 2 tbsp coconut sugar
  • 1 tbsp detox superfood  (optional)
  • 2 eggs
  • 500 gr very ripe mashed banana
  • 1/2 cup hazelnut cream
  • 130 gr dark tahini
  • 1/2 cup butter
  • 1/2 cup Tapioca Flour
  • 1/2 cup Oat Flour  ( don’t worry if you don’t have both kinds of flour, just using one it will come out just as good)
  • 2 tbsp fine sea salt
  • Black and White Sesame Seeds
  • Nuts and Chocolate (to decorate)

  1. To prepare your Banana Bread start by preheating the oven to 180ºC and line the pan with wax paper.

  2. Whisk together the milk and vinegar in a bowl, then mix in the sugar, bananas, tahini, melted butter, eggs, superfoods, and hazelnut cream.

  3. In a separate bowl, mix together the flours, cinnamon, and salt. Then slowly mix the dry ingredients in with the wet ones, stirring slowly. (be careful not to overmix, just enough so that there are no clumps of flour)

  4. Next, pour the dough into a mold and sprinkle the sesame seeds on to. Then bake for 30 minutes, and then lower the oven to 150ºC, and bake for 1 hour, or until you can stick a knife in the bread and it comes out dry.

  5. Remove from the oven, and let cool for 10 minutes, before removing it from the mold and allowing it to completely cool. Lastly, heat the oven to high heat with the grill setting and slice the bread into thick slices. Let it toast a minute and then finish it off with a dab of butter. Feel free to sprinkle some nuts on top or add some chocolate to taste.
