A Special Recipe For Mother’s Day: Homemade Cookies

When we first learn to cook, almost all of us follow the advice of our mothers. Cuisine is synonymous with heritage. We remember recipes, but what we really remember are those smells and flavors that transport us back to our childhood and those happy memories. So, to celebrate Mother’s Day, we suggest this very fun (and delectable) recipe.

The recipe is so easy to make, which makes it an enjoyable way to spend time with your children or mother. And, if you’re separated by distance, you can always show her the recipe via a video-call and make these homemade blueberry cookies together at the same time. If you’re the competitive type, you could also suggest a friendly competition to see who’s come out better! Of course you can count on these being free from Gluten and refined sugars

Blueberry Cookies

Blueberry Cookies

Ingredients

  • 2 eggs
  • 1/4 cup quinoa flour and chocolate flavored oat flour (it tastes better with a mixture of both, but don’t worry if you just use one).
  • 1/2 cup fresh blueberries (also goes great with blackberries, raspberries or raisins)
  • 1/2 cup almond cream
  • 2  tbsp coconut sugar, or raw honey (or one of each) 
  • 2 tbsp chocolate protein
  • 1/4 cup butter
  • Lime zest
  • 1/4 cup grated coconut salt

Instructions

  1. To start making your homemade blueberry cookies, beat the eggs with the melted butter, almond cream and coconut sugar.

  2. Mix the dry ingredients: flour, grated coconut, chocolate protein, and lime zest.

  3. Combine both the wet and dry ingredients until a dough forms. Add in the blueberries. If the consistency of the dough isn’t the right texture, stick it in the fridge and let chill for 10 minutes

  4. Preheat the oven to 180ºC. Use a spoon to make small balls, and then place on top of wax sheet paper, making sure to push down a little to form the shape of a cookie

  5. Let bake for about 8 minutes

Notes

Chef’s trick: If you can’t find oat flour, but you have oat flakes, you can make your own flour.  All you need to do is crush the flakes until they have a powder like texture. Then you can add in some natural cacao powder, and a little vanilla or cinnamon to give it your favorite flavor.

Can you eat these Homemade Cookies without any regrets?

Yes, of course you can! The great thing about this recipe is that it doesn’t call for any refined sugars or flours. What’s more is that, as it is made of fruit you can have it for a mid morning or afternoon snack without any regrets. These are sure to become your kids favorite cookies. Oats are highly recommended for even the youngest children,especially those who can’t eat gluten. This is the perfect way for them to still enjoy baked goods.

We know that must of us won’t be able to resist eating them straight out of the oven (try not to burn yourselves). Besides eating them all by themselves, they can also be used in a variety of other ways. They are great for breakfast, as this is often the time of day when we crave something sweet with our tea or coffee. And, as they are not overly sweet, they go great with a glass of sweet milk, like almond or oat milk.
