If you’ve traveled to Spain or maybe even lived there, then surely you’ve tried, or at least heard of Salmorejo. Salmorejo is a traditional Spanish dish great for the summer. Usually made with tomatoes, bread and garlic.However, we’ve decided to put a healthier twist to this traditional Spanish dish. We’ve added in avocado! Yes, you read that correctly:avocado salmorejo! The avocado gives this dish such a pleasurable creamy and smooth texture. It goes great with the tomato and is much fresher and less fatty than bread. Besides that, it’s also very fulfilling. I decided to top this dish off with some beef jerky to give it a nice crunchy touch. Have you ever tried jerky before? It’s an ideal way to incorporate quality proteins into our dishes.
- 2 large avocados (or 3 small ones)
- 1 large tomato (or 2 small ones)
- 1 cucumber
- 1 garlic clove
- 1/2 a lemon
- Extra virgin olive oil
- A pinch of salt
- Beef jerky with fresh sour cream and basil (optional)
To start, cut the avocados in half lengthwise and remove the pit.
Scoop the avocado out and place in a blender.
Peel and cut the tomato and also add it to the blender.
Squeeze the juice from half a lemon over the tomato and avocado, and add in the cucumber and peeled garlic clove.
Blend everything together using the highest setting and slowly add in the extra virgin olive oil as you go. Blend everything until you get a nice uniform and creamy texture.
Remove from blender and pour in a bowl or serving dish of your choice. Throw some beef jerky on top with some chopped basil leaves and drizzle some sour cream over your salmorejo, and enjoy!
